About this Recipe

Bircher muesli is one of those recipes that you can just make your own. You can play with the nuts, the spices, the seeds, the juice and the dried fruit, and then on the day that you eat it, you can serve it with whatever fresh fruit you have on hand – making it fresh and different every time, or familiar and comforting. It’s up to you. This recipe is enough for 5 serves – enough for 1 person for 5 days. This will keep in the fridge in (preferably) a glass container, for up to 1 week

Ingredients

  • 2-3 apples of choice – grated
  • 2 1/2 cups rolled oats
  • 1 1/2 cups apple juice
  • 1 1/2 cups natural yoghurt, plus extra to serve
  • 1 tsp cinnamon
  • 2/3 cup flaked almonds
  • 2/3 cup roughly chopped walnuts
  • 5 tablespoons pepitas
  • Fresh berries to serve

Instructions

  1. Mix the grated apple, rolled oats, apple juice, yoghurt and cinnamon in a bowl until well combined.
  2. Cover and place in the fridge for at least an hour or overnight
  3. Combine the flaked almonds, walnuts and pepitas in a small bowl
  4. Stir half the nut mixture through the muesli, reserving the remainder for when ready to eat it
  5. When ready to eat, stir half cup of yoghurt through muesli, and serve with sprinkling of nuts and fresh fruit

Notes

  • For an added fibre hit, choose Barley Plus Porridge Oats
  • Feel free to use any juice in place of the Apple Juice
  • Try Nutmeg instead of Cinnamon
  • Instead of Almonds and Walnuts, try Pecans, Cashews, Macadamias, or Brazil nuts
  • You could replace the pepitas with a mix of Flaxesseds and Sunflower seeds
